Alex’s Banana Bread
2 cups flour
1 tsp. salt
2 tsp. baking soda
1 cup vegetable oil
2 cups sugar (I cut this in half)
2 cups mashed ripe bananas
1 cups walnuts or chocolate chips (optional)
Sift flour, salt and baking soda. Separately mix oil, sugar, bananas, and eggs. Add dry ingredients to oil mixture. Pour batter into two greased and floured loaf pans.
Bake at 350 degrees for 45 minutes. Cool before serving.

1 large egg
1/2 cup light brown sugar
1/4 cup granulated sugar
1/2 cup butter
1/4 cup sour cream or Greek yogurt
2 tsp vanilla extract
2 ripe bananas
1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
Pinch of salt
1 large egg
4 oz softened cream cheese
3 tbsp all-purpose flower
Mix the first six ingredients in a large bowl. Mash the bananas into the mixture and then add the next four ingredients to create the bread batter. Set aside.
In another large bowl, mix the remaining egg, cream cheese, sugar, and flour to create the cream cheese filling.
Pour half of the bread batter into a 9x5 inch pan. Add the cream cheese filling, smooth into corners, and top with remaining batter.
Bake at 350F/180C for about 50 minutes. Allow to cool for 15 minutes before serving.
